Toby’s Banana Snax

Hello, this is Toby Green ’25! This recipe appeared to me in a dream. I don’t remember the context of the dream, but I woke up with the idea burned into the inside of my eyelids and a crazy hankering for bananas. When I was able to make my dream a reality, it worked better than I expected. The crunch of the cereal crust, the fluffy pancake mantle, and the sweet banana inner core come together to create a wonderful, otherworldly mouth experience. If you don’t believe me, try it yourself. I dare you. . .

Tobert’s Fried Banana Snicky Snax

Ingredients:
2 Bananas
1 cup pancake mix 1⁄2 cup milk
A few cups of olive oil 1 tbsp veggie oil

1 egg
Cinnamon Toast Crunch

Tools:
Knife/Cutting surface Mixing bowl
Mixing utensil
Frying pan
Stove
Tongs
Something sturdy for smashing (rolling pin, baseball bat, a well-placed roundhouse kick, etc.)

Directions:
1. Peel and slice the bananas to your desired size (I would recommend about half an inch thick).
2. In the mixing bowl, combine the pancake mix, milk, egg, and veggie oil and mix until batter consistency.

3. Smash up some Cinnamon Toast Crunch. I smashed it while it was still in the bag, but if you want to keep some uncrushed, put your desired amount into a Ziploc bag and crush it up.
4. In a pan on the stove, heat up some (not all) of the olive oil. Somewhere between 1/3 of an inch to 1⁄2 an inch deep would work well.

5. Once the oil gets hot enough, dip the banana slices into the pancake batter using the tongs, coat them in the smashed cereal, then plop ’em down into the pan.
6. Let fry for a few minutes, then carefully flip over to get the other side. There isn’t a definitive amount of time they need to fry for, just watch for when it becomes a pretty golden brown. The oil in the pan will need to be replenished as you use it, so just make sure there’s enough for the little banana slices to have a relaxing bath in.

7. When they look ready, pull them out of the oil and put on a plate to cool down. These are tasty little treats that don’t require a lot of ingredients. Enjoy them with your favorite pancake toppings!
