Dorm Chef: If It’s Peanut Butter You Crave…

We’re talking stupidly simple snacks this week. Both are easy to make and easy to devour. PB popcorn balls are great on the go, have infinite mix-in possibilities, and can last you the whole week. Rich chocolate avocado pudding is a smart way to sneak in some heart and hair-healthy essential oils and get your chocolate fix. Again, all you need is a few staple ingredients, a microwave and a little creativity!

PB popcorn energy bites

5 cups popcorn (1 bag)

1/3 cup honey or agave syrup

1/4 cup peanut butter (almond butter works or even better, Nutella)

1/2 cup rice krispies or cereal (best to use mini cups from pub)

1/4 cup dried fruits, nuts, m&ms etc. Get fancy!

* TIP: try kettlecorn for sweeter bites, or get savory and try shredded cheeses and spice!

Directions:

Line a small baking sheet with wax paper or tin foil, set aside

Put the popped popcorn into a large bowl

In microwavable bowl, combine the honey and peanut butter

Heat in 30 second intervals, stirring frequently until it comes to a bubble

Pour the honey mix over the popcorn and stir with a big silicone spatula or spoon

Sprinkle cereal and mix-ins and stir until combined

Let popcorn sit until cool, then use hands to press firmly into balls

Place balls on paper-lined baking sheet to cool completely

Store at room temperature for up to a week

Creamy Chocolate & Peanut Butter Avocado Pudding

1 ripe avocado

1/4 c. Chobani Greek Yogurt- preferably vanilla or plain

2 Tbs peanut butter (can omit, simply add more yogurt)

2 Tbs cocoa (packets from the pub!)

Banana or other fruits of choice

Directions: Remove the skin and pit from the avocado. Mash vigorously in a bowl with fork until smooth as possible. Add the remaining ingredients and stir until incorporated. Store in an airtight container and chill in fridge, if you wish. Serve plain or with fruit, granola, etc.

* TIP: You know an avocado is ripe if you can easily twist out the little step from the top of it, or it gives gently when you press it. To ripen an avocado more so within a day or two, place it in a brown paper bag and crimp it shut.
