Cheesy Baked Potatoes

 A comforting, satiating, and delicious dish to be paired up with or eaten on its own. Get cozy, with warm cheesy twice baked potatoes! 

Makes 8 potato halves. 

Ingredients: 

– 1 cup of shredded cheddar cheese (or any cheese of your liking) 

– ¼ of a whole leak, chopped 

– Generous pinch of Salt 

– Generous pinch of Pepper 

Directions: 

1. Begin by preheating oven to 425 degrees. 

2. Poke some holes into the potatoes with a fork, then let sit in the oven for 45 minutes. 

3. Once the potatoes are thoroughly cooked (aka you can easily cut the potatoes), slice each one into two. 

4. Scoop the innermost sections of your potatoes into a new bowl, almost making a potato boat. Add in your shredded cheese, leaks, salt, pepper, and mix until well combined. 

5. Refill your empty potatoes with the new mixture. Top the potatoes off with some more shredded cheddar. 

6. Put it back in the oven for 10 minutes or until the cheese is nice and melted.
