Chickpea-Beet Patties

A hearty, pink, and protein filled meal perfect for veggie burgers, salads, or a main dish! Chickpea-Beet patties can be flavored using any seasons or sauces, fitting whatever flavor profile you desire! 

Makes roughly 8 patties. 

Ingredients: 

  • 1 cup of chickpeas, preferably soak overnight 
  • 6 peeled beets 
  • 1 cut of oats OR 2 cups of nutritional yeast 
  • ½ a diced onion 
  • 1 whole clove of garlic 
  • Tamari 
  • Mustard 
  • Remaining seasonings as desired! 

Directions: 

1. Begin by boiling your chickpeas until soft texture. Bring your water to a boil, at chickpeas, and boil for roughly 45 minutes. Let them cool. 

2. As the chickpeas are cooking, begin grating the beets on a medium size of a cheese grater. 

3. Once the chickpeas are cooled, put them in a bowl and mash using either your cleaned hand, or potato masher. 

4. Afterwards, mix in the beets to create a beautiful pink colored mush. Add in the oats OR nutritional yeast (I prefer nutritional yeast) and proceed to mix all together. 

5. Begin to mix in tamari, mustard, and other desired seasonings. Once evenly mixed, start forming pink patties about the size of your palm. 

6. Flatten the patties onto a baking sheet, and then bake for 25 minutes at 400 degrees in an oven. 

7. Once the chickpeas are done, let them cool off, and serve to your friends! Have fun, play with your food, and hug your friends <3
