Hey all, you fantastic green beans! Hope you all had a great time at Folk Fest this Friday! In honor of it finally feeling like spring (no more snow!). I have a fun cookie recipe for you. These buttery, citrusy cookies are super easy, and they have a sweet lemon glaze to top them off, making them the perfect springtime sweet treat!
For the cookies:
2 ¼ cups all-purpose flour
½ tsp. baking powder
1 cup butter (2 sticks), at cool room temperature
¾ cup granulated sugar
2 tbsp. lemon zest
1 large egg
For the icing:
1 ½ cups powdered sugar
2-4 tbsp. lemon juice
Directions:
1. Preheat the oven to 350 degrees. Line two baking sheets with parchment paper (or grease them with butter).
2. Combine flour and baking powder in a small bowl. Set it aside for now.
3. Using a stand mixer, beat together the butter, sugar and lemon zest until light and fluffy. Beat in the egg until well combined.
4. On low speed, add the flour mixture and blend until incorporated and the dough starts to come together.
5. Create roughly 1 ½ tbsp. sized dough balls, roll with your hands, then place on a baking sheet and flatten slightly with your palm.
6. Bake for 12-14 minutes, or until cookies are slightly brown along edges. They will still be soft, so allow to cool for at least five minutes before adding the glaze.
7. To make the icing, combine the powdered sugar and lemon juice in a small bowl and mix well. Then use the icing to top your cookies, sprinkle any leftover lemon zest on top, and enjoy!
